I tried to print in booklet mode with the recommended Foxit PDF reader. I selected: Print Handling: "Scale=none", "Booklet", "Margins: 0 inch". In the printer's properties: Page format=A3, output format=A3 instead of "fit to printable area". But I still obtain the same additional margins as the booklet option of Adobe Acrobat reader.

What am I doing wrong?

I would just stick to Adobe, i have never used Foxit.

Perhaps the idea of making scans and typesets with no margins at all is good, because the printing process makes some.
