Chopin etudes aren't easy, Chopin preludes are.
Prelude number 4, 6, 7, 9, 20 aren't very hard (easiest are number 4 and 7).
The first prelude of WTC 1 (C Major) is also very easy, but beautiful.
I think Burgmüller etudes (opus 100) are also doable.

I mentioned this to someone here on the forum before, you can try looking at the first movement of Edward Elgar's Sonatina for Solo Piano. It is a very pretty, simple piece by a famous, well-respected composer.

As I recommended for a similar earlier question, take a look at Schumann's Album für die Jugend, a large collection of pieces both easier and harder than your Beethoven. From there you can graduate to Schumann's Kinderszenen, which is one of the easiest of true piano masterpieces, and/or some of Bach's 2-part inventions.

Tchaikovsky's "Album for the Young" (or "Children's Album") would work -- it's modeled on Schumann's sets.
Some of the pieces among Cesar Cui's Miniatures, Opp. 20 and 39 are relatively easy -- but not all.

Would Debussy's Children Corner be too hard?

On the whole I found Debussy's Childrens Corner just about as hard to read through as Schumann's Kinderszenen. I'd rate them as requiring about the same amount of digital dexterity, but of course the style and interpretation would differ tremendously. Both scores are more difficult than the Fur Elise level.

try some bach minuets/gavottes/courantes/etc.. (all the dances)
i started playing piano on those
they're rigid with strict counterpoint but i totally recommend them
maybe you could also try Grieg's Puck
CPE Bach's Soffleggio
some Clementi Sonatinas
Beethoven sonatinas (there's only 2, though)
mozart's g major sonata is really really easy too
